Sweet Potato Sausage Egg Casserole

How to Make

Heat oven to 400F. Lightly grease a 9x13 baking dish and set aside. On a large baking sheet, toss sweet potatoes with 2 T oil and salt/pepper. Roast in a single layer for 30 minutes. Meanwhile, over medium heat, cook sausage until completely done. Remove from pan, drain part of the oil (leaving about 2 T), then sauté onions, and garlic until soft. Transfer sausage, sautéed veggies and sweet potatoes to the 9x13 pan and toss in the spinach. In a separate bowl, whisk together the eggs, milk, 1 t salt and 1/4 tsp pepper. Pour mixture over sausage/potatoes. Bake uncovered for 30 minutes, until eggs are set.

Ingredients

  • 2 tablespoons avocado oil

  • 1 lb sweet potatoes, peeled and cut into 1/2″ cubes

  • ½ cup onion, diced

  • 2 cloves garlic, minced

  • ½ cup diced red bell peppers

  • 1 lb ground breakfast sausage or bacon

  • 2 cups spinach leaves, chopped

  • 12 large eggs

  • ½ cup milk of your choice, almond, coconut, etc.

  • kosher salt and freshly ground black pepper
