Stuffed Baked Potatoes

How to Make

Preheat oven to 375 and bake potatoes (lightly coat with avocado oil and puncture the skin with a fork), until soft to the touch or a knife goes all the way in easily. Approximately 45 minutes.


While the potatoes bake, brown the ground meat in a large skillet over medium heat. When completely cooked, remove from the pan. You should have about 1 tablespoon of fat in the pan. If not, add a tablespoon of avocado oil.

In the same pan, sauté the veggies until softened, add the garlic at the very end.

Return the ground meat to the skillet and add the tomato sauce and all the spices. Let simmer for 10-15 minutes.

Add salt and pepper to your taste.


When the potatoes are ready, slice lengthwise and generously top with the meaty filling.  This can be served over top a bed of spinach or alongside steamed broccoli.  Sprinkle with cheese, sour cream, onions/chives or any other toppings. If you are dairy free, try a drizzle of dairy free ranch to round out the flavor!

  • 4 med-large Sweet Potatoes

  • 1 T avocado oil

  • 1 lb ground turkey, chicken or beef

  • 1 red onion, finely chopped

  • 1 red bell pepper, finely chopped

  • 3 gloves minced garlic

  • 2 salked celery, chopped

  • 2 tsp chili powder

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 (15 oz) can tomato sauce

  • salt and pepper

For topppings or sides: shredded cheese, sour cream, green onions, jalapenos, dairy free ranch, steamed brocolli, fresh spinach
