Quick and Healthy Banana Muffins

How to Make

  • Preheat oven to 350 and prepare muffin tins

  • In mixing bowl combine bananas, honey, vanilla, oil, egg, yogurt and milk.  Mix until well combined.

  • Add flour, soda and salt, Mix well.

  • Stir in chocolate chips.

  • Divide batter evenly in the muffin tin.

  • Bake for 12-15 minutes

Ingredients

  • 2 or 3 ripe bananas (more bananas means a slightly mor chewy and dense testure)

  • 1/4 cup honey

  • 1 T vanilla

  • 1 T olive oil

  • 1 egg

  • 1/2 Cup plain yogurt (dairy or dairy free)

  • 1 T milk (dairy or dairy free)

  • 3/4 cup GF flour (I use straight cassava flour)

  • 3/4 cup almond flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup chocolate chips
