Pasta Salad

How to Make

Cook sausage. (Bake, grill or saute it in a skillet). Allow to cool.


Cook noodles to "al dente". Allow to cool.


Combine all other ingredients and mix dressing.


Add sausage and noodles to the veggies, toss gently and add 3/4 of the salad dressing.

Refrigerate for at least 1 hour.  Add remaining dressing and serve as is or over a bed of spinach or any leafy green.

Ingredients

  • 1 lb italian sausage

  • 1/2 red onion, diced

  • 1 bell pepper, chopped

  • 1 cup cucumber, chopped

  • 1 small container cherry tomatoes, cut in half

  • 1 small jar kalamata olives, sliced

  • 1 can artichoke hearts

  • 16 oz chickpea noodles


Dressing: 

  • 1/2 cup olive oil

  • 1/2 cup red wine vinegar

  • 1 clove minced garlic

  • 2 tsp dijon mustard

  • 2 tsp dried oregano

  • 2 tsp dried thyme

  • 1/2 tsp salt

  • pinch of pepper
