Healthy Ham and Bean Soup

How to Make

  1. In a large saucepan or intant pot, heat oil over meadium-high heat. Add onion, carrots and celery. Cook 3-4 minutes until softened. Add garlic and cook an additional minute.

  2. Add cooked ham and saute 2 minutes before adding stock. 

  3. Bring to a boil and simmer for 5 minutes.

  4. Stir in beans, pepper and thyme and cook on low at least 10 min. 

*If using instant pot, saute vegtables then add other ingredients and place on manual pressure for 3 min. and do a quick release. Place pot on 'keep warm' setting until ready to eat. Enjoy!


  • 2 Tbls Olive Oil

  • 1 Onion- diced

  • 1 Carrot- peeled and diced

  • 2 Celery Stalks- chopped

  • 2 Cloves Garlic- minced

  • 2 Cups Cooked Ham- diced

  • 1 1/2 Liters Stock- chicken, beef or vegtable

  • 3 Tbls Fresh Thyme- chopped

  • 4 Cans White Cannellini Beans (15oz) rinsed and drained

  • 1/2 Tsp Black Pepper

  • Dash of Salt, if needed
